Roasted Haloumi & Veg Skewers

Serves 4


Ingredients

  • 1/4 cup olive oil

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons red wine vinegar

  • 2 teaspoons freshly minced garlic

  • 2 teaspoons dried oregano

  • 1 teaspoon mint leaves, finely chopped

  • Salt and black pepper

  • 500g haloumi cheese, cut into 1-inch cubes

  • 2 medium zucchini, cut into rounds

  • 1 large capsicum, cut into chunks

  • 2 medium red onions, cut into chunks

  • 400g cherry tomatoes

  • Skewers

  • Tzatziki, for serving

  • Pita bread, warmed, for serving



Method

  1. Preheat oven to 200°C (fan-forced) and line two baking trays with baking paper.

  2. Soak skewers in a container or bowl of cold water while preparing ingredients. This prevents them from burning.

  3. Combine olive oil, lemon, vinegar, garlic, oregano, mint, salt and pepper into a bowl and mix well. Place vegetables into marinade bowl and toss to completely coat.

  4. Thread the vegetables onto skewers, being careful not to overcrowd. Place skewers on prepared baking trays and roast for 15-20 minutes or until vegetables and haloumi are charred and softened. Turn skewers halfway through the cooking time. Set aside to cool.

  5. Serve skewers with tzatziki and warm pita breads.
