Rhubarb and Apple Crumble
Serves 6-8
Ingredients
400g rhubarb, chopped into 1cm chunks
2-3 red apples, chopped into 1cm dices
2 tablespoons caster sugar
1 teaspoon vanilla extract
2 teaspoons finely grated lemon zest + 1 tablespoon juice
1/4 cup maple syrup
1/2 teaspoon cinnamon
Crumble:
1 cup rolled oats
1/4 cup plain flour
2 tablespoons caster sugar
1/2 teaspoon cinnamon
1/4 cup flaked almonds (or any nut of your choice)
2 tablespoons maple syrup
2 tablespoons of butter
Greek yoghurt, for topping
Method
Preheat the oven to 180*C fan-forced. Place apple, rhubarb, sugar, vanilla, lemon zest and juice, maple syrup and cinnamon in a baking dish and toss to combine well.
Meanwhile, combine all the crumble ingredients in a bowl and mix well with clean finger tips until a crumble consistency is reached. Scatter crumble over apple and rhubarb mixture and place in the oven for 30-40 minutes or until the crumble is golden brown.
Remove from oven and allow to cool slightly before serving with a dollop of Greek yoghurt.
