Lamb Kofta Pita Breads

Serves 4


Ingredients

  • 500g lamb mince

  • 1/2 brown onion, finely diced

  • 1/2 cup of breadcrumbs Quarter bunch of coriander stems finely chopped

  • 2 cloves garlic, crushed

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon oregano

  • 1 teaspoon sumac

  • 1/2 teaspoon of salt and pepper

  • 4 pita breads

  • 1 cup tzatziki

  • Salad ingredients of your choice


Method

  1. Combine all kofta ingredients in a large bowl and mix well using your hands.

  2. Separate into 8 portions and roll each portion into a kofta/sausage shape. Thread onto skewers.

  3. Heat olive oil in a large frying pan over medium-high heat and pan-fry koftas for 7 or 8 minutes, continuously rotating, until charred on the outside and cooked through.

  4. Remove from heat and seat aside.

  5. Spread tzatziki on pita breads, top with koftas and your salad ingredients of choice.
