Lamb Kofta Pita Breads
Serves 4
Ingredients
500g lamb mince
1/2 brown onion, finely diced
1/2 cup of breadcrumbs Quarter bunch of coriander stems finely chopped
2 cloves garlic, crushed
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon oregano
1 teaspoon sumac
1/2 teaspoon of salt and pepper
4 pita breads
1 cup tzatziki
Salad ingredients of your choice
Method
Combine all kofta ingredients in a large bowl and mix well using your hands.
Separate into 8 portions and roll each portion into a kofta/sausage shape. Thread onto skewers.
Heat olive oil in a large frying pan over medium-high heat and pan-fry koftas for 7 or 8 minutes, continuously rotating, until charred on the outside and cooked through.
Remove from heat and seat aside.
Spread tzatziki on pita breads, top with koftas and your salad ingredients of choice.
