Fish Tacos With Mango Salsa

Serves 4


Ingredients

  • 400g white fish fillets (flathead/basa/cod/bream)

  • 1 tablespoon paprika

  • 1 tablespoon cumin

  • Pinch of salt

  • 2 tablespoons olive oil

  • 1 small mango, diced (interchangeable with pineapple)

  • 1 cucumber, diced

  • 1/2 red onion, finely diced

  • 1/4 cup black beans, drained and rinsed

  • 1/4 bunch coriander, leaves picked and stems finely chopped

  • Juice of 1/2 lime

  • 8 corn tortillas (small)


Method

  1. On a plate combine paprika, cumin and salt and roll fish in spice mix to coat.

  2. Heat olive oil in a non-stick frying pan over high heat. Add fish and cook for 2-3 minutes each side or until just cooked. Remove from heat.

  3. In a medium bowl, combine mango, cucumber, red onion, black beans, coriander leaves and lime juice and mix well.

  4. Construct tortillas by adding fish and then topping with mango salsa!
