Fish Tacos With Mango Salsa
Serves 4
Ingredients
400g white fish fillets (flathead/basa/cod/bream)
1 tablespoon paprika
1 tablespoon cumin
Pinch of salt
2 tablespoons olive oil
1 small mango, diced (interchangeable with pineapple)
1 cucumber, diced
1/2 red onion, finely diced
1/4 cup black beans, drained and rinsed
1/4 bunch coriander, leaves picked and stems finely chopped
Juice of 1/2 lime
8 corn tortillas (small)
Method
On a plate combine paprika, cumin and salt and roll fish in spice mix to coat.
Heat olive oil in a non-stick frying pan over high heat. Add fish and cook for 2-3 minutes each side or until just cooked. Remove from heat.
In a medium bowl, combine mango, cucumber, red onion, black beans, coriander leaves and lime juice and mix well.
Construct tortillas by adding fish and then topping with mango salsa!
