Banana Protein Pancakes

Serves 2 (makes 6 pancakes)


Ingredients

  • 1/3 cup (40g) vanilla protein powder

  • 1 large ripe banana, mashed

  • 1/4 teaspoon cinnamon, ground

  • 1/4 teaspoon baking powder

  • pinch of salt

  • 2 large eggs, whisked

  • 1 tablespoon plain flour

  • Olive oil spray

Toppings (Optional):

  • Sliced fresh banana

  • Fresh berries

  • Maple syrup

  • Crushed nuts

  • Greek yoghurt


Method

  1. Combine protein powder, mashed banana, cinnamon, baking powder, salt, whisked eggs, and flour in a large mixing bowl.

  2. Heat olive oil in a large fry pan on medium heat and scoop out the pancake mixture into the pan using a 1/4 cup measurer. Cook for 60-90 seconds or until bubbles are forming on the top and the underside is golden. Flip and cook for another 60-90 seconds. Repeat with remaining mixture.

  3. Serve with a dollop of yoghurt, a drizzle of maple syrup, and topped off with fresh berries.
