Banana Protein Pancakes
Serves 2 (makes 6 pancakes)
Ingredients
1/3 cup (40g) vanilla protein powder
1 large ripe banana, mashed
1/4 teaspoon cinnamon, ground
1/4 teaspoon baking powder
pinch of salt
2 large eggs, whisked
1 tablespoon plain flour
Olive oil spray
Toppings (Optional):
Sliced fresh banana
Fresh berries
Maple syrup
Crushed nuts
Greek yoghurt
Method
Combine protein powder, mashed banana, cinnamon, baking powder, salt, whisked eggs, and flour in a large mixing bowl.
Heat olive oil in a large fry pan on medium heat and scoop out the pancake mixture into the pan using a 1/4 cup measurer. Cook for 60-90 seconds or until bubbles are forming on the top and the underside is golden. Flip and cook for another 60-90 seconds. Repeat with remaining mixture.
Serve with a dollop of yoghurt, a drizzle of maple syrup, and topped off with fresh berries.
